More than 25 years in the New Zealand lamb business, OVATION has been developed to better express our key points of difference: tenderness, unique aging techniques to preserve the natural qualities of our free-range grass-fed lamb to deliver product with perfect taste, texture and flavour.
Ovation New Zealand Limited is a 100% New Zealand owned and operated business. From our industry leading farmers and our highly trained butchers to International chefs, we bring a personalised responsibility at every level in delivering our lamb products with exceptional taste, texture and flavour. Our point of difference is our understanding of Tenderness. Using 100% Free Range grass fed lamb and our specialist skills combined with unique ageing capabilities this tenderness is appreciated by customers throughout the world.
We build long-term customer supply programmes due to the consistent availability of a consistent product to a consistent specification. We do as little as possible to alter nature in the process of producing products that deliver a perfect tender lamb dining experience.
While the UK and Continental Europe remain significant markets for year round chilled supply and North America for their emphasis on high value food service cuts OVATIONTM continues to ensure all markets get served with equal dedication. The sales and marketing staff carry considerable experience in global exporting and regularly travel to plan and action programmed sales initiatives with our customers around the world.
OVATIONTM operates three modern plants in the North Island of New Zealand. Throughout all of the facilities substantial investment has been made in state of the art machinery, processes and quality assurance programmes to ensure products meet the high quality standards required by our customers.
The slaughter plants have been designed with very small livestock holding facilities to ensure a minimal period of time between lambs arriving at the plant and processing taking place.
The emphasis is on ensuring a clean, cold and simple environment in which to process chilled products; all key factors in achieving the longest possible shelf life. This process requires that strict standards are met on all aspects of hygiene and temperature control through the production and distribution process
